Meatball Sandwich (Toasted Sub + Marinara + Melty Mozzarella)
This is the classic meatball sub setup: meatballs simmered in marinara, tucked into a toasted sub roll, and covered with mozzarella that gets all melty. Takes about 20 minutes if you start with frozen meatballs (aka the weeknight cheat code).

Instructions
-
Heat the marinara sauce in a saucepan over medium heat until it’s gently bubbling.
- Add the frozen meatballs, stir to coat, and cover.
- Keep it low-ish and steady for about 10–12 minutes, until the meatballs are hot all the way through. (Cold centers are a cruel surprise.)
-
Preheat the oven to:
450°F
- Slice the sub rolls lengthwise on a cutting board using a bread knife.
- Toast them in the hot oven for 3–5 minutes until the inside is warm and a little crisp. (If you skip toasting, the bread will go soggy and nobody’s proud of that.)
-
Fill each toasted sub roll with meatballs and spoon on extra sauce.
- Top with mozzarella.
- Try to keep it mostly in the bread, not all over the counter. (Gravity loves a meatball. It’s rude like that.)
-
Bake the sandwiches on a baking sheet for 5–7 minutes until the mozzarella is melted and bubbly.
- If you want it more brown and toasty, push it another 1–2 minutes… but watch it. Cheese goes from golden to smoke alarm solo fast.
-
Serve right away.
- Hold the sandwich with a pot holder-level respect for hot cheese.
- Eat it hot and messy. This is not a “dainty bites” situation.
lightbulb_2 Tips
Pro tip: If your sauce is thick, add a tiny splash of water before you heat it. You want it saucy enough to coat the meatballs, not so thick it just sits there like tomato paste’s grumpy cousin.
Common mistake: Don’t boil the meatballs like you’re mad at them. Keep it gentle and simmering or the sauce can spatter everywhere. Cleaning marinara off your stove is a personality test.
Pro tip: Toast the sub rolls before you fill them. It buys you time against the dreaded soggy bread situation. (Soggy bread is how sandwiches lose all self-respect.)
Funny but real warning: If you overfill the roll, you’ll drop a meatball. It will roll under the fridge and live there forever with all the missing socks. Use a little restraint. Just a little.
Swap table: because sometimes your fridge has opinions.
If you have… Do this Tomato sauce instead of marinara Use it, but season it more or it’ll taste flat. Swiss cheese or just “cheese” Top the sandwich anyway. It’ll still get melty and good. No sub rolls Use any bread you’ve got. Just toast it so it can handle the sauce.
