Instructions
1) Warm and toast the buns
Split the burger buns and toast them in the toaster until the inside is golden and warm.
If you don’t have a toaster, heat a saute pan, press the buns cut-side down, and toast for 1–2 minutes until lightly crisp (watch them… bread goes from “nice” to “charcoal” like it’s trying to impress someone).
2) Slice the pickles
On a cutting board, slice the canned pickles with a knife into thin coins.
Try not to eat half of them “for quality control.” Or do. I’m not your manager.
3) Crisp up the fried chicken (optional but worth it)
If your frozen chicken cutlets are already hot and crunchy, skip this. If they’re sad and soft, heat a saute pan, add the chicken, and warm it for 2–3 minutes per side until hot and crisp.
Use tongs to flip so you don’t shred the crust like a raccoon getting into a trash can (been there).
4) Build the sandwich
Spread mayonnaise on the bottom bun (and top too if you like living a little). Keep it even and not dripping.
Add the fried chicken. Pile on the pickle slices. Then close with the top bun and press gently so it holds together.
5) Serve right away
Cut in half (optional), serve immediately, and eat while it’s hot and crunchy.
If you let it sit too long, the bun will get soggy and you’ll blame the recipe. Don’t do what I did.
Timing note: If the chicken is already cooked, this is basically a 10-minute sandwich.
lightbulb_2 Tips
Pro tip: Toast the buns. Seriously. A warm bun keeps the mayo from soaking in and turning your sandwich into sad bread soup.
Common mistake: Don’t overheat the chicken in the pan. You want it hot and crispy, not dry and regretful.
Swap idea: Out of mayonnaise? Aioli works great. Greek yogurt also works, but it’s giving “I’m being healthy on purpose” energy (respect, but it’s different).
Pickle talk: If your pickles are super wet, pat them dry. Otherwise the crunch-to-sog ratio gets weird fast.
Panini-press move: If you have a panini press, you can press the finished sandwich for 30–60 seconds to make it hot and extra crunchy. Just don’t smash it like you’re angry at it.
