Buffalo Chicken Sandwich
This is the classic Buffalo chicken sandwich: hot, saucy chicken on a toasted bun with ranch or blue cheese. It’s messy in the best way, and it takes about 20 minutes if you don’t get distracted by “just one more” sauce taste-test.

Instructions
1) Toast the buns (so they don’t turn into a sad sponge)
- Split the burger buns and warm a saute pan over medium heat. Add a little butter and let it melt fast.
- Toast the buns cut-side down until golden and crisp-ish,
1–2 minutes. Pull them off and set aside.
If you skip toasting, the bun will soak up buffalo sauce like it’s paying rent. Don’t ask how I know.
2) Cook the chicken
- Pat the chicken breast dry (paper towels = boring but helpful). Heat the saute pan again with a small knob of butter over medium-high heat.
- Cook the chicken 3–5 minutes per side until browned and cooked through. Check the thickest part with an instant-read thermometer — you want
165°F.
Don’t crank it to “volcano heat” or you’ll get a burnt outside and a raw middle. Been there. Regretted it.
3) Sauce it up (aka the whole point)
- Turn the heat to low. Add the buffalo sauce to the pan and toss the chicken until it’s glossy and fully coated.
- If you want it a little richer, stir in a small bit of butter. If you want it hotter, add more buffalo sauce (brave words, sweaty consequences).
4) Build the sandwiches
- Spread ranch dressing (or blue cheese) on the bottom bun. Pile on the buffalo chicken while it’s hot and saucy.
- Top with lettuce for crunch if you want. Close the bun and serve right away.
5) Optional: add pickles (highly recommended)
- Layer on canned pickles for that salty tang.
- Press the sandwich gently so it doesn’t slide apart like a bad Jenga tower.
