Instructions

1) Get the chicken ready

Grab the chicken breast and pat it dry. Drizzle on a little olive oil, then season with salt and black pepper.

Keep it simple, don’t overthink it, this is a sandwich.

Pro move: If your chicken breast is super thick, slice it in half lengthwise so it cooks faster and stays juicier. If you don’t, you’ll end up with the classic “outside is done, inside is… questionably alive” situation.

2) Heat the grill (or grill pan)

Set a grill (or grill pan) over medium-high heat and let it get hot.

You want it properly hot, not kinda warm, not “I think it’s ready”.

Warning: Don’t toss the chicken on a cold grill. That’s how you get sad, pale chicken that sticks like it’s paying rent.

3) Grill the chicken

Put the chicken breast on the grill and cook until it has grill marks and releases easily.

Cook about 5–7 minutes per side, depending on thickness, until the center hits:

165°F

Use an instant-read thermometer if you’ve got one. If you don’t, cut into the thickest part and make sure it’s not pink and the juices run clear.

And yes, I know, cutting it “lets the juices out.” So does overcooking it into a chicken flip-flop, so pick your battles.

4) Toast the bun

Split the burger buns and toast them until the inside is golden.

Keep it lightly toasted, not burnt, we’re making a sandwich, not charcoal art.

5) Slice and build

Move the chicken breast to a cutting board and slice it.

Let it sit for 2 minutes so it stays juicy (or ignore me and watch it leak onto the board — your call).

6) Assemble the sandwich

Spread mayonnaise on the bottom bun (and the top too if you’re living your best life). Add lettuce, tomato, and the grilled chicken.

Season the tomato with a tiny pinch of salt and black pepper.

Yes, season the tomato. It matters. I skipped it once and my sandwich tasted like a wet napkin with ambition.

7) Serve

Close it up, press gently, and eat while the chicken is still warm and the bun is still toasty.

If it falls apart, congratulations — you made a real sandwich, not a showroom model.

Pro tip: For cleaner bites, put lettuce directly on the bottom bun. It works like a little raincoat so the bun doesn’t get soggy.

Common mistake: Don’t crank the heat to “surface of the sun” because you’re hungry. High heat plus chicken breast can go from juicy to dusty fast. Keep it medium-high and be patient for like, 6 whole minutes.

Pro tip: Toast the bun even if you think you don’t need to. Untoasted buns turn into sad sponge bread the second mayo hits them. Ask me how I know.

If you’re out of mayo: Swap in aioli for something punchier, or Greek yogurt if you’re trying to be healthy and also punish yourself a little. It’s still good, just less rich.

Tomato reality check: If your tomato is watery and sad, slice it and salt it for 5 minutes, then blot. Your sandwich will taste like you planned it that way, not like you grabbed produce in the dark.
