Patty Melt (Rye Bread, Beef Patty, Caramelized Onions, Swiss)
This is the classic patty melt situation: a burger patty plus grilled cheese energy, all smashed between buttery rye. You get sweet caramelized onions, melty Swiss, and bread that’s crisp enough to make noise when you bite it (in a good way).

Instructions
1) Caramelize the onions
Heat a skillet over medium heat. Add butter, then throw in the onion (thin-sliced). Season with salt and black pepper.
Keep stirring every so often until the onions turn soft, deep golden, and kind of jammy — about 12–18 minutes. If they start burning, your heat is too high (ask me how I know).
If the pan looks dry, add a tiny knob of butter. Don’t panic. Onions are dramatic.
2) Cook the beef patty
Push the onions to one side (or take them out to a plate). Turn up the heat to medium-high. Add the beef chuck patty and season with salt and black pepper.
Cook until browned and cooked through, about 3–4 minutes per side. If you’ve got a thermometer, you’re aiming for:
160°F / 71°C (ground beef)
Move the patty to a plate. Wipe out excess grease if it’s getting wild in there (we’re making a sandwich, not a slip-n-slide).
3) Assemble the sandwiches
Lay out the rye bread slices. Butter one side of each slice — edge to edge (bare corners are how sadness enters).
On the unbuttered side, layer Swiss cheese, the beef patty, the caramelized onions, then another slice of Swiss cheese. Close with the second slice of bread, butter-side out.
4) Griddle until crisp and melty
Heat the skillet back to medium (not high — high heat is how you get black bread and cold cheese, aka regret). Add the sandwich and press gently with a spatula.
Cook until the bread is crispy and golden, about 3–4 minutes per side. Flip carefully, then cook until the cheese is fully melted.
5) Slice and serve
Pull the patty melt off the pan. Cut with a bread knife (or a chef’s knife if you like living dangerously). Serve it hot before the cheese decides to glue itself to the plate.

Pro tip: Low and steady heat is the move for onions. You want them sweet and brown, not burnt and bitter. If you scorch them, don’t try to “save it.” Just start over. I’ve tried. The onions won.
Common mistake: Cranking the heat for the sandwich. The bread will go too dark before the cheese melts. Keep it at medium and give it time. Yes, patience. Sorry.
Pro tip: Put cheese on both sides of the patty. It acts like edible glue and keeps the onions from falling out like they’re making a break for it.
Swap idea: No Swiss cheese? Use cheddar, provolone, or Monterey Jack.
Or cottage cheese(please don’t, this isn’t a cry for help).Butter note: If you’re out of butter, you can use mayonnaise on the outside of the bread for browning. It sounds wrong, but it works. It also sounds like something you’d do at 11pm, which is exactly when patty melts happen.
