Heat your griddle over medium heat for 2–3 minutes. Don’t crank it to high unless you enjoy black bread and cold cheese (I have made this mistake so you don’t have to).

Butter one side of each bread slice with butter — edge to edge, no bald spots. Lay one slice butter-side down on the griddle and add the Swiss cheese on top. If the cheese is shy and doesn’t cover the bread, overlap it a bit. Cheese gaps are how sadness enters a sandwich.

Top with the second bread slice, butter-side up. Cook until the bottom is golden and crisp, about 3–4 minutes. Press lightly with a spatula — not like you’re doing drywall work, just enough to help it brown evenly.

Flip with a spatula (confidence helps). Cook the second side until golden-brown and the cheese is fully melted, about 3–4 more minutes. If it’s browning too fast, turn down the heat — your sandwich should be toasty, not traumatized.

Remove to a plate, wait 30 seconds (so the cheese stops trying to escape), then slice with a bread knife. Eat it while it’s hot and gooey. If you burn your mouth, just know you’re not alone. We’ve all done it.

Pro tip: If your bread is browning but the cheese isn’t melting, your heat is too high. Turn it down and give it an extra 1–2 minutes. Grilled cheese is a slow flex, not a sprint.
Common mistake: Butter the bread, not the pan. If you melt butter in the griddle first, it can burn fast and make your sandwich taste like regret. (Ask me how I know. Don’t.)
Pro tip: Using sourdough bread gives you a crispier outside and a bit of tang. Using white bread is still totally fine — it’s the classic “I just want food” option.
Common mistake: Don’t smash the sandwich like it owes you money. A light press helps it brown, but a hard press can squeeze out the cheese and you’ll end up cleaning the griddle instead of eating lunch.
Pro tip: Out of butter? Mayonnaise works shockingly well for browning. Spread it thin on the outside. It sounds weird, but so do half the things we do as adults and we survive.
