Instructions
1) Get your station set up
Grab a cutting board, a bread knife, and a knife for the chicken. Put down your bread slices so you don’t do the classic “build the sandwich in mid-air” move. It’s messy. Ask me how I know.
2) Slice the chicken breast
Put the chilled roasted chicken breast on the cutting board and slice it into thin pieces. Keep them even-ish so one bite isn’t all chicken and the next bite is just regret.
3) Prep the lettuce
Rinse your lettuce if it needs it, then dry it a bit (paper towel works). Tear or cut it to fit the bread. You want it crisp and not dripping, unless you like mayo-water… which is a choice.
4) Spread the mayo
On one or both slices of bread, spread the mayonnaise in a thin layer. Go edge to edge so every bite has some love. Don’t pile it on like you’re frosting a cake (unless it’s been that kind of week).
5) Build the sandwich
Layer on the lettuce, then add the chicken breast slices. If you’ve got salt and black pepper, hit the chicken with a tiny pinch. Close it up and press it gently so it holds together.
6) Slice and pack (optional)
