Veggie Sandwich with Avocado and Hummus
This veggie sandwich is crunchy, creamy, and takes about 10 minutes. It’s basically a salad you can hold, which feels like cheating in the best way.

Instructions
-
Toast the bread (optional) and set it on the cutting board. Grab your hummus or mayonnaise and spread a good layer on both slices. Yes, both. No, dry bread is not a personality. We’ve all been there.
-
Slice the cucumber and slice the tomato. Cut the avocado and scoop it out. Keep the slices thin and even-ish so your sandwich doesn’t do that cartoon thing where it explodes out the back when you bite it.
-
Layer the lettuce on the bottom slice, then add cucumber, add tomato, and add avocado. If you’re using mayonnaise, this is where you quietly accept you’re making a very normal sandwich and not a “wellness moment.”
-
Season with salt and black pepper. Then close the sandwich, press it gently, and slice it with a bread knife. Don’t smash it like you’re angry at it. We want tidy. Not panini trauma.
-
Eat right away, or wrap it up for later. If it sits too long, the tomato will soak the bread and you’ll get that sad, floppy situation. Ask me how I know.
lightbulb_2 Tips
Pro tip: If you’re not toasting the bread, spread hummus or mayonnaise edge to edge. It makes a little moisture barrier so the tomato doesn’t turn your sandwich into soggy toast cosplay.
Common mistake: Overstuffing. It feels brave in the moment, then you bite it and half the cucumber launches onto your shirt. Keep it layered and reasonable (said no one at 1 a.m., but still).
Avocado note: Ripe avocado should feel slightly soft when you press it. If it’s rock hard, it’s basically a green paperweight. If it’s mush, well… you just made
baby fooda “spread.”Flavor boost: A pinch of salt on the tomato is not optional if you want it to taste like tomato and not wet crunch. I skipped it once. My sandwich tasted like regret.
Make-ahead idea: Pack the tomato separately and add it right before eating. Your bread stays firm, and you look like a person who has their life together (even if you don’t).
