What to do

  1. Crack the eggs into a bowl. Add a splash of milk if you want your omelet softer. Throw in a little salt and pepper. Mix it up with a fork.
  2. Slice the sausages into bite-sized pieces. Not too thick or they won't heat up right.
  3. Put a frying pan on the stove. Turn it to medium heat. Toss in some butter or oil.
  4. Add the sausage pieces. Cook them for about 2-3 minutes so they get hot and a little brown.
  5. Pour your egg mix all over the sausages in the pan. Tilt the pan so it spreads out.
  6. Let it sit for about 1-2 minutes. Don’t touch it too much. You want the bottom to set.
  7. Use a spatula to move the edges in so the liquid runs out to the sides. Do this a couple times.
  8. When the eggs look pretty much set (still a little wet on top is fine), fold the omelet in half or slide it out flat.
  9. Turn off the heat. Slide it onto a plate. Eat while it’s hot.

lightbulb_2 Tips

  • Don’t crank the heat too high or the eggs go rubbery.
  • If you want cheese, toss some on before you fold. Melts nice.
  • Any sausages work honestly. Even leftover hot dogs.
  • If the omelet breaks, who cares. Scrambled is good too.
  • Clean-up is easy if you use a non-stick pan.
